CHOCOLATE CHIP PROTEIN MUFFINS

I LOVE muffins and I especially love muffins that are mostly healthy. I make this recipe AT LEAST once a week and my whole family loves them. The muffins usually don’t last until lunch time. SO tasty and easy to make.

Ingredients:

2-3 very ripe bananas, mashed until smooth

1 egg

3/4 cup of milk of your choice (vanilla almond or oat milk are my favorites to use) (if your batter seems a little dry, you can add an extra splash of milk! I usually do)

2-3 TBS melted coconut oil

splash of vanilla

1 tsp cinnamon

1/3 cup of brown sugar

2 cups Kodiak buttermilk pancake mix

3/4 cup mini chocolate chips (regular size are okay too! I like the tiny one because every bite will have chocolate!)

Directions:

  1. Preheat oven to 350 degrees and prepare muffin tin. I usually spray my muffin liners but if you are skipping the muffin liners, definitely spray your pan with non-stick cooking spray.

  2. Mash bananas until smooth and add in egg, milk, vanilla, cinnamon and brown sugar. Mix well.

  3. Stir in Kodiak pancake mix until smooth.

  4. Stir in chocolate chips.

  5. Heat coconut oil in the microwave until melted and stir into batter. Work quickly so the coconut oil doesn’t set back up.

  6. Evenly scoop muffin batter into muffin pan. A mini muffin tin or regular size muffin tin both work great for this recipe!

  7. Bake 18-20 minutes.

  8. Enjoy!
